Serves: 4 -6

 

Ingredients

6 Golden Eggs
1 tsp low cholesterol oil
4 chopped garlic cloves
400g chopped onion
2 tsp tumeric
1 dsp fresh coriander
1 tsp ground ginger
1 tsp cummin
1 tin chopped tomatoes
1 tin coconut milk.


Method
Conventional: Place Golden Eggs in saucepan. Cover with water and bring to boil for ten minutes. Cool in iced water.
Microwave: Heat 200ml water to boiling in 1 litre measuring jug. Cover each Golden Egg completely with foil. Immerse in the water ensuring water completely covers all Golden Eggs. Microwave on 100% power for 4-5 minutes. Stand for 1 minute then cool in iced water.
Heat oil in pan. Add onion and garlic. Cook until soft.
Add spices and cook over a medium heat for 1-2 mins.
Add tomatoes and coconut milk. Cook for 15 mins.
Add peeled hard boiled Golden Eggs and cook for further 10 minutes. Serve with rice and garden salad.
