Fruit 12 hours, Cream 30 minutes Cooking/Chilling Time:
Sauce 3 hours
Use any selection of sliced fruits
¼ cup icing sugar
½ cup fresh orange juice
3/4 cup white wine (sauterne) or fruit juice
fruits for garnish
MethodMix the marinade from the 'icing sugar to the wine'.
Add fruits and refrigerate overnight. Drain juices but retain. Return fruit to fridge for ½ hour.
Cream: 2 tbs sugar, 1 tbs cornflour, 2 tbs cold water, 3 Golden Egg yolks, ¾ cup whipped cream or yoghurt.
Mix sugar, cornflour, water. Heat in a double saucepan until thick - stir constantly.
Blend Golden Egg yolks, then mix in a little of the hot sugar, cornflour paste. Return to pan, add reserved juice. Continue to heat till thick. Don't boil. Stir constantly then chill 2 hours.
Fold in whipped cream or yoghurt, rest ½ hour.
To serve - place fruits on platters, spoon cream over, garnish with fruits. (Cream will freeze.)
