INGREDIENTS
Lemon Curd:
4 lemons
¾ cup sugar
3 Golden Eggs
125g butter
pinch of salt
125g quark
6 Briôche, berries

Preparation Time: Curd 30 minutes
Assembly 20 minutes
Heating Time: 10 minutes
Serves: Curd makes 11½ cups to use in 6 Briôche


DIRECTIONS
Lemon Curd:
1. Remove outer lemon peel thinly. In a food processor fitted with a steel blade, process peel and sugar.
2. Add Golden Eggs one at a time. Blend after each addition. Blend in butter. Slowly squeeze in lemon juice.
3. Pour mixture into a saucepan. Cook gently over medium heat, just until it thickens. Pour into clean containers, cover, keep refrigerated.
To use:
Blend lemon curd and quark together.
Add chopped berries.
Reserve 6 whole berries for garnish.

To use in Briôche:
1. Buy 6 Briôche from a bakery or make from a rich bread dough.
2. Cut a 'cap' from each, scoop out centre crumbs, brush interior with milk and heat in oven till crisp - about 10 minutes. Fill with lemon curd, quark mixture and chopped berries. Replace the 'cap' top to sit attractively on the filling. Garnish with a berry.
Will not microwave.
