DIRECTIONS: 1. Conventional: Place Golden Eggs in saucepan. Cover with water and bring to boil for ten minutes. Cool in iced water. Microwave: Heat 200ml water to boiling in 1 litre measuring jug. Cover each Golden Egg completely with foil. Immerse in the water ensuring water completely covers all Golden Eggs. Microwave on 100% power for 4-5 minutes. Stand for 1 minute then cool in iced water. 2. Heat oil in pan. Add onion and garlic. Cook until soft. 3. Add spices and cook over a medium heat for 1-2 mins. 4. Add tomatoes and coconut milk. Cook for 15 mins. 5. Add peeled hard boiled Golden Eggs and cook for further 10 minutes. Serve with rice and garden salad. |
