INGREDIENTS
3 egg whites
700 grams pure icing sugar, sifted
hundred and thousands
300 mls cream, whipped

DIRECTIONS
1. In a bowl lightly whisk egg whites with a fork. Add a little of the icing sugar, mix until thick. Add remainder and mix well by hand to form a stiff mixture.
2. Knead mixture will by hand in an icing sugared board to form a smooth ball. Form into a sausage shaped roll.
3. Cut into pieces and form into small rolls. Roll in hundreds and thousands.
4. Arrange 6 at a time in a circle on grease proof paper and microwave in HIGH (100% power) for 1 minute 15 seconds. Allow to stand for 5 minutes before removing from paper. Repeat with remaining mixture.
5. Serve sandwiched with whipped cream. Makes 24 sandwiched meringues.
NOTE: These meringues are lighter and more airy than meringues made by traditional methods.
