INGREDIENTS:
Per person:
1 Golden Egg
lettuce leaves
½ avocado
½ mango
alfalfa sprouts
1 dsp low fat mayonnaise
1 pitta bread.

Preparation Time: 5 minutes
Cooking Time: 10 minutes


DIRECTIONS:
1. Conventional: Place Golden Eggs in saucepan. Cover with water and bring to the boil for 10 minutes. Cool in iced water.
Microwave: Heat 200ml water to boiling in 1 litre measuring jug. Cover each Golden Egg completely with foil. Immerse in the water ensuring water completely covers all Golden Eggs. Microwave on 100% power for 4-5 minutes. Stand for 1 minute then cool in iced water.
2. Slice pitta bread in half and open each half. Slice avocado and mango. Roughly chop lettuce.
3. Spread inside of pitta halves with mayonnaise. Fill with avocado, mango, lettuce and alfalfa.
4. Chop Golden Eggs and add to pockets. Serve.
