INGREDIENTS:
4 Golden Eggs
125g sausage meat
125g low fat mince
seasoned flour
1 beaten Golden Egg
dry breadcrumbs
low cholesterol oil for cooking.

Preparation Time: 15 minutes
Cooking Time: 7 minutes per Scotch Egg
Serves 4


DIRECTIONS:
1. Conventional boiling: Place Golden Eggs in a saucepan. Cover with water and bring to boil for ten minutes. Allow to cool.
Microwave boiling: Heat 200ml water to boiling in 1 litre measuring jug. Cover each Golden Egg completely with foil. Immerse in the water ensuring water completely covers all Golden Eggs. Microwave on 100% power for 4-5 minutes. Stand for 1 minute.
2. Mix together sausage meat and low fat mince. Peel boiled Golden Eggs.
3. Cover each Golden Egg in meat (approx 2 tbs each).
4. Roll in flour, dip in beaten Golden Egg and coat with breadcrumbs.
5. Heat oil and deep fry each Scotch Egg for 6-7 mins.
6. Drain and serve hot or cold with salad.
