Spanish Potato Omelette

Spanish Potato Omelette

Will not freeze.

Ingredients

4 tbs butter
3 medium potatoes - diced small
4 spring onions - chopped
5 Golden Eggs
1 tbs water
salt & pepper
2 tbs butter


Method

Turn on the grill.
Melt first butter in a fry pan, toss in potatoes. Cook till potatoes are soft then add spring onions. Turn out onto a plate to keep warm.
Wipe out the pan with a paper towel. Reheat pan over a low heat.
Break eggs into a basin, add water and seasoning, then beat lightly to break yolks.
Add second butter to pan to sizzle. Add egg mixture to begin cooking instantly. Draw mixture from the sides to the middle of the pan to allow all the egg to cook quickly.
While still very moist, add the potato, onion hot mix. Cook until the omelette base is set.
Place the pan under the preheated grill to set the top and brown any visible potato. Loosen omelette from the base and slide onto a platter to serve.
Garnish with spring onion curls.
