Speedy Egg and Spinach Salad

4-6 as a side dish
Ingredients
3 Golden Eggs
handful of spinach leaves
3 rashers of cooked bacon
1 avocado
1 orange
cherry tomatoes
Italian or French dressing
Method
Conventional: Place Golden Eggs in saucepan. Cover with water and bring to boil for ten minutes. Cool in iced water.
or Microwave: Heat 200ml water to boiling in 1 litre measuring jug. Cover each Golden Egg completely with foil. Immerse in the water ensuring water completely covers all Golden Eggs. Microwave on 100% power for 4-5 mins. Stand for 1 minute, then cool in iced water.
Wash spinach leaves and tear into bite sized pieces. Peel and cube avocado. Peel and segment orange. Toss together.
Slice boiled Golden Eggs and add to salad.
Garnish with dressing and cherry tomatoes. Serve immediately.
