Crunchy Cheese Souffles

Cooking Time: 15-20 minutes
Serves: 16 pieces
(Will freeze. Will not microwave)
Ingredients
8 slices bread
1 Golden Egg - separated
1 cup grated cheese
pinch of mustard
pepper
herbed butter or quark (quark or softened butter mixed with chopped chives or 1 tsp onion stock).
Method
Heat oven to 180°C.
Remove crusts from bread - cut each slice in half. Spread with herbed butter or quark.
Separate Golden Egg - mix yolk with cheese, mustard and pepper. Beat egg white until it's glossy white and 'peaks' when the beaters are removed.
Pour Golden Egg yolk mixture into egg white foam. Fold together carefully to combine all egg white. Pile mixture onto bread fingers, place on greased oven trays.
Bake 180°C 15-20 minutes until cheese is puffed and golden.
