Frosted Fruits
Description
Preparation Time: 15 minutes
Serves: 8-10 individual serves.
Will freeze.
Ingredients
100g butter - softened
1/3 cup icing sugar
250g quark or ricotta cheese
250g mascapone
4 Golden Egg yolks - hard-boiled and mashed
Rind of 1 orange
1/3 cup pecan nuts - chopped
½ cup sultanas
½ cup dried apricots
¼ cup currants (marinate fruits in ½ cup brandy if liked)
2 tbs orange juice
½ cup cream - whipped
cinnamon powder
Method
Cream butter and icing sugar. Beat till light and fluffy.
Mix ricotta or quark, mascapone and Golden Egg yolks into a smooth paste. Add to butter mixture.
Blend in grated orange and juice, nuts and fruits.
Pile into individual serving dishes. Dust with cinnamon powder.
Serve with toasted fruit bread fingers or fruit for a dessert - with strong coffee. May be served as a paté or dip.
